Mini Luau

Since we were going to Curt & Lori's tonight for dinner I decided to make the Fluffy Dinner Rolls, even though the food theme was luau food. Mom has a stand mixer but not one with a dough hook. I discovered that by putting in only one of the beaters it can work better than mixing by hand. However, in the Hawaiian humidity it made the dough really soft so I ended up adding about a cup more flour.

Aunty Florence made 3-bean salad, 2 days ago. She said the secret is to marinate it for 3 days. So we did. We had it and avocado sandwiches for lunch.

We went to Curt and Lori's house for dinner. The theme was Hawaiian food, basically we had a mini-luau.
Clockwise from far left: poi, kalua pig, Holy Bakery apple pie, haupia, fluffy dinner rolls, imitation crab salad, taigu, ahi poke with limu, lomi salmon, & 2 bowls of chicken long rice. Center L to R: laulau, butter.

We had a hilarious time listening to Mom argue with Lori's dad who also has dementia. Somehow they got on to the subject of working in the sugar mill. We predicted they would begin repeating the argument in about 20 minutes, and they did.

Happy Birthday to Debbie!
